Huế Clams (Hến): A Beloved Local Specialty and Culinary Delight

Falling for Mini Clam : A Specialty love by all
One of Huế’s most beloved specialties is the humble mini clam – locally known as Hến. What makes Huế clams special is that they belong to the species Corbicula fluminea, naturally much smaller than the clams you may find elsewhere in Vietnam. As with shrimp versus tiny river prawns, the smaller the sweeter and more delicate the flavor - as people often say.
These clams are harvested around Cồn Hến, a small islet on the lower Perfume River. Every year, during the rainy season from August to October, floods from the mountains bring layers of fertile silt, creating a rich feeding ground for the clams. For centuries – at least four to five hundred years – the community here has been known for clam fishing, with their reputation deeply connected with the river.

Cutural Significance
In the past, poor villagers could not afford pork or chicken, they turned to clams from the riverbeds. Over time, this humble food became inseparably tied to local life, and after several centuries, it quietly transformed into a beloved specialty.
If Phở is the go-to breakfast of Hà Nội, then in Huế, a steaming bowl of clam noodle salad (mì hến) is just the same. Chewy noodles tossed with fresh herbs and veggies, a drizzle of fragrant annatto oil, fish sauce, and a touch of fermented shrimp paste, then topped with crispy pork skin and roasted peanuts. On the side, a hot bowl of clam broth with a hint of ginger – warming, nourishing, and perfect to start the day. Along with Bún Bò Huế, it is the breakfast locals hold closest to their hearts.
While Cơm Hến (clam rice) may be the most famous dish, my personal favorite has always been clam noodles. And of course, Locals will tell you there’s nothing better than a plate of sauteed clams with crackling rice paper enjoyed with a cold beer, watching the lively streets pass by. Simple, rustic
